Chef BethAnn Lyon is one of only three women to graduate from the Coach House apprenticeship program, along with Chefs Anna Banda and Mackenize Bentley. Over the course of her career, she has worked in every aspect of restaurants, including owner (Black Cat food truck and one of the original The Collective tenants). She's worked with A Good Egg Dining, 84 Hospitality, and most recently, Ramsay's Kitchen. In the episode, we discuss her new gig as GM of Cafe Evoke in downtown Edmond. The job represents a reunion of sorts with one of her long-time chef friends and AGE alum Chef Robert Black and operating partner Lori Dickinson Black.

Lyon got her start cooking in the early '00s while she was bartending at Lobby Bar. She gives credit to Killer Squid Hospitality cofounder J Mays for his early encouragement, even buying her first set of knives to help fill out her chef kit. After a few decades i hospitality, Lyon is ready to talk about the grind and its impact on human bodies, including mental health.
